Soft pieces of bread soaked in egg, rolled up with a delicious raspberry “jam” filling. I served these for my Nina with greek yoghurt for dipping, scrambled egg and some fresh fruit. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ What would you dunk yours in? I have to admit I got out the choccy sauce for my portion 😋😋 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients: (makes four) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 4 slices of bread ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • Approx 10 Raspberries ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 2 teaspoons of chia seeds ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 1 egg ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ Method; ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1) Crush the Raspberries using the back of a fork in a small bowl. Add the chia seeds, stir and set aside. ⠀⠀⠀⠀⠀ 2) Cut the crusts off each slice of bread. Then using a rolling pin, roll out each slice till they’re as flat as you can get. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 3) Whisk the egg into a medium sized flat bowl. ⠀⠀⠀⠀⠀⠀ 4) Spread each piece of bread with a teaspoon amount of jam going edge to edge.
